The Windows Update screen normally allows you to pause for 5 weeks (35 days), and you cannot select any longer than that, but if you run the tool I created, "Pause Windows Update for 777 Weeks," you can pause automatic updates for Windows 10 and Windows 11 for up to 777 weeks (5439 days).
This effectively disables Windows Update completely.

How to use a tool to pause automatic updates for Windows 10 and 11 for 777 weeks
If you pause Windows Update for an extended period of time, bugs and vulnerabilities in Windows 10 and 11 will remain unfixed. If you connect to the Internet in this state, you may be vulnerable to malware (viruses, etc.) or cyber attacks, so please refrain from using it unless you have a special reason not to.
